Finding the Anti-Mold Substances in Mung Bean Germinated-Water

Medical doctors have pointed out that there are far fewer drugs used for fungi infection than anti-biotics for bacteria. If fungi develop resistance to drugs, they will pose a threat to patients. Hence we want to find out a solution to this problem. The effect of “Mung Bean Germinated-Water” to inhibit mold growth in our previous studies has found out that the 30°C/180pc./3Days and 25°C/120pc./4Days samples have better effects. Other references have studied the anti-mold effect of homogenized mung beans, but they are different from our research. In our research, firstly, we tested the anti-mold effect of different seeds, and chose mung beans for further experiments. Then, impurities would clog up the filters in protein concentrators, hence we removed them and it didn’t affect the results. Later, we used protein concentrators to find the molecular weight of the anti-mold substances. In the results, every “Cut off” sample had anti-mold effects, and every sample had the substances under 3 kD. Hence, we speculate that the molecular weight of anti-mold substances is under 3 kD. Next, we used different methods to characterize the anti-mold substances. Denaturing proteins and removing small molecules in mung bean germinated-water let the anti-mold effect vanish. Hence we speculate that they participate in this mechanism. Lastly, we compared two samples, having and not having anti-mold effect respectively, by LC-MS/MS, and found the possible anti-mold substances in mung bean germinated-water. In the future, we hope that we can confirm the exact anti-mold substances in order to design an effective anti-fungi medicine.
